How to enjoy mangoes
MANGO CHICKEN CURRY
Prep: 15 Minutes Marinate: 1 hour
Cook: 20 minutes Makes: 6 servings
½ Cup plain whole-milk Greek Yoghurt ¼ Cup yellow curry paste
1 Tbsp grated fresh ginger 1 Cup canned unsweetened Coconut Milk
2 Cloves garlic minced ½ Tsp Ground cumin
¼ Tsp kosher salt 1/8 tsp cayenne pepper
2 Tbsp Ghee or canola oil 2 Cups fresh mango, pureed until smooth
1 Kg Skinless, boneless chicken 3 cups hot, cooked jasmine rice
cut into bite-size pieces Fresh coriander or parsley leaves
Chopped fresh mango wedge pieces Lime wedges
1. Whisk together the top eight ingredients, in a bowl. Stir in chicken. Cover and chill for 1 hour.
2. Heat Chee or canola oil in an extra-large skillet over medium-high heat. Add the chicken mixture. Cook for 5-6 minutes or until chicken is cooked through, stirring frequently. Stir in pureed mango and coconut milk; reduced heat to medium-low. Simmer uncovered for approximately 15 minutes or until slightly thickened, stirring occasionally.
3. Spoon curry mixture over rice. Top with the slice mango and coriander or parsley. Serve with lime wedges.
